This article reviews issues on the study of consumer preferences in order to form a new product line. Especially this one direction becomes important in the field of marketing, current conditions of economic change when to goods from the consumer are put forward elevated quality and range requirement. The variety of the flour confectionery product range is reflected by imported and local products. Proposed own point of view on the definition of product range, which is a set of products that correspond to each other on certain grounds, which the manufacturer promotes on the market, taking into account the fullest satisfaction of consumer requirements. A study of the market of flour confectionery in the city of Kremenchuk. The marketing research is made using a survey method in relation to the choice of cookies by respondents of all ages. It is established that the Kremenchuk consumer prefers domestic cookie producers, which indicates the demand for Ukrainian products in the food market. It is determined that the decisive criteria when buying cookies are the price and appearance of flour products. The article also reviews the psychological aspects in consumers\u2019 choice of flour confectionery products (cookies). Statistical analysis of the data is based on the conducted research with the subsequent presentation of the results and their interpretation. An effective assortment policy implies the use of such methods for the formation of a product set, the application of which will allow the adoption of optimal managerial decisions regarding the qualitative and quantitative structure of the range, frequency of updating and other aspects, ensuring a high level of its competitiveness. The practical significance of the conducted research is that the results of consumers\u2019 preferences on the flour confectionery market in Kremenchuk can be used in the activities of enterprises engaged in the production and sale of cookies to form an assortment product line.
