Developing in a world that has already reached the required caloric content of diets, saturating them to some extent with animal proteins, unfortunately, need young people. By researching food security, trusting the affordability of food, consumers in such countries remain highly vibrant in their choices, shifting the emphasis among workloads, pressing health benefits, they are known to be used in other areas and can be used by schoolchildren for the environment. The International Dairy Federation notes in its report that it is the modern consumer who shapes the policy of the dairy industry. By recognizing the consumer benefits in time, the world’s major food brands can capture the growing dairy market. The article assesses the socio-economic features of dairy consumption in Ukraine. One of the lowest incomes in Ukraine among European countries limits the animal products consumption and accounts for a high share of food expenses in the structure of all expenses – 41%, including 13.5% for dairy products. The volumes and structure of dairy products consumption in rural and urban households are analyzed. Various milk chains have been identified and characterized, depending on the category of milk producers and the localization of consumers. So, rural residents produce up to 50% of dairy products in their households, urban residents mainly buy industrial milk processing products. Fresh dairy products, including milk, fermented dairy products, and soft cheese, prevail in the dairy rations of rural and urban residents. A close link between the monetary incomes of the population and the consumption of dairy products has been established. With increasing incomes, the consumption of dairy products rises to rational consumption standards in both urban and rural households.<\/p>\n
